This fix depends on ome/ansible-role-omero-server#61 and is required to fix the broken CI builds (see https://github.com/ome/omero-server-docker/runs/3916440335?check_suite_focus=true)

@joshmoore @jburel if there are no objections from your side, I propose to merge this later today and build & deploy new Docker images with the upgraded pip fix since this is a requirement to fix the failing omero-test-infra based builds - see https://github.com/ome/omero-metadata/runs/3986569650 for an example
