Bumps the adapter release metadata to 1.10.1 (updates __version__.py, setup.py, and adds 1.10.1/1.10.0 entries in CHANGELOG.MD).

Fixes a failing snapshot test by fully overriding TestSnapshotEphemeralHardDeletes.test_ephemeral_snapshot_hard_deletes to create/seed/alter the source table using the adapter’s expected schema handling and to assert snapshot row counts and rerun behavior.
