ref(kafka): Remove dead Kafka message types and unused profiling writer#666

Remove FunctionsKafkaMessage, ProfileKafkaMessage, and ChunkKafkaMessage structs that were never sent after ingestion endpoints were removed in #654. Also remove the profilingWriter, unused broker/topic config fields, and associated constants. Co-Authored-By: Claude <noreply@anthropic.com>

FunctionsKafkaMessage,ProfileKafkaMessage, andChunkKafkaMessagestructs that become unused after ingestion endpoints were removed in #654 (all of this is handled by theprofilesconsumer in Sentry now).
