Scalar documentation

Hey, a .NET dev here!

First off, I’m excited to see that SpringDoc now has built-in support for Scalar! 🥳🚀 While skimming through the documentation, I noticed that in a few places the name “Swagger UI” is still used instead of “Scalar.”

I'd love to contribute and fix this, but unfortunately I'm unable to build the project.

Hey @xC0dex,

You only need to update the .md files; the build process handles the rest for the next release.
If you want to test your changes locally, just run:

mvn clean package

Once that's done, you'll see a docs folder containing the generated HTML, JS, and CSS for the site.
