[Feature]: Add platform usage and business operations metrics

Suggestion / Feature Request

As a platform admin, I'd like to know user usage rates and business operation metrics such as:

1. Average time spent on the platform
2. How many TipTap documents are allocated per organization
3. Database performance and connection metrics
4. Most-used features (this will take some category brainstorming to track this effectively)
5. Average cost-per-user per day/month...so that I can better understand the usage dynamics and adjust platform operations appropriately to ensure this is a cost-effective product.
