Upgrade EKS K8s version to 1.34 or 1.35 in ClusterClass examples

Current ClusterClass example uses EKSConfigTemplate and hence needs to use 1.32, which has reached its standard EOS, ref. We should update the ClusterClass to use NodeadmConfigTemplate instead and update the k8s version to 1.34 or 1.35.

I think this is still blocked by upstream.

The PR that fixes the issue has been merged but no release includes the new types yet. I requested a new release a few weeks ago here but I haven't heard back from the CAPA community.

Upstream CAPA has a new release v2.11.0 now, which includes the fix mentioned. Can this be moved out of the blocked now? I suppose this needs a new CAPA release downstream, but that is most probably tracked in moving CAPI forks to rancher issue: #2264 and essentially blocked by EIO ticket: https://github.com/rancherlabs/eio/issues/3994
