New 2026 release

I'm thinking this project is ready for a new release, considering the work that has been done over the last 3 months.

Tasks:

• Decide on Upgrade to new major version of Kafka #297 (comment)
• Update history.md - or move over to Automatically generated release notes and edit the md references.
• Update package versions
• Release to NuGet

Yup, that sounds like a good shout. I'm away for a couple of weeks, but will do a release early June. (That gives us a couple of weeks to think about anything else to get in there, too...)

I added 2 tasks in the description. For the history, not sure if you want to keep track via the history.md, or just use the auto-format on the releases page, as I linked (https://docs.github.com/en/repositories/releasing-projects-on-github/automatically-generated-release-notes)
