Add: functional loggingHandler for backend (better logging and tracing)

Things to consider:

• Using Winston for logging and using log.x everywhere throughout the backend.
• Use log levels, structured logging, and formatted logging to provide accurate information.
• Transport type should be only Console before we consider a variety of options for transports (file, http, cloud).
• differentiate between a dev logger and a prod logger.

NOTES:

There are a lot of modules in the backend that have console.log for testing purposes and should be removed for backend security (like showing the UID of a user when fetching content and things of that nature). This should be removed in favor of using proper logging with a logging handler in the /shared directory.
