Cookbook 103 needs maintenance

• Remove patch 103 - Patch auto-instrumentation app #73 when otel auto-instrumentation supports flask3
• The app should export traces using automatic instrumentation (Update 103 + temporary app patch #71 Update docker-compose.yaml #69)
• Update apm collector version (Update 103 + temporary app patch #71)
• Replace deprecated otlp_proto_http to use otlp (Update 103 + temporary app patch #71)

There is an issue on the opentelemetry repo: "Auto instrumentation is not working" (open-telemetry/opentelemetry-python#3482)

It is related to the automatic instrumentation app (server_automatic.py) we want to use in this cookbook - this app used to work with auto instrumentation. With #71, the cookbook is now using the programmatic instrumentation app (server_programmatic.py).
